Arrow roots in coconut sauce<span class=1 min read" />

2 Red onions

3 tomato

75ml coconut cream(Kara coconut cream)

1/4 tsp Black pepper

1 tsp Curry powder

1/2 tsp Turmeric

5 cups of arrow roots (cut into cubes)

1 1/2 Corn starch

2 1/2 tsp Salt


Pre-heat the pan for about a minute on high heat

Dice the onions and tomatoes

Once the pan is hot, add vegetable oil

Once the oil is hot, add onions and fry until golden brown or translucent.

Add tomatoes and cover for 5 minutes and let them steam on low heat

Add salt

Add black pepper

Add curry powder

Add tumeric

Add 175ml water

Add 1 1/2 tbsp of cornstarch to 125ml of warm water in a cup .
Begin to stir as you pour into the mixture making sure none of the cornstarch is at the bottom of the cup.

Add the coconut cream to taste and let simmer
Proceed to add the yams into the mixture and cover . Let it come to a boil for 10 min.

Turn off and garnish with dhania.


Serve with a protein of your choice.
